I put an OCZ Vertex 3 240GB in my MBP and a 500Gb 7200RPM HD in place of the optical drive. Some people report that SATAIII SSD drives in the new MBPs stall out a lot and beach ball on them. Make sure you update to the latest firmware which is supposed to help with these issues. At least with the OCZ drives, you have to update the Firmware in Windows as there is no OS X support for this, so keep that in mind.

Also, make sure you use bootcamp to partition and install Windows before you put in the 2nd Hard Drive. Apple EFI Firmware does not support booting disks from external devices with the exception of OS X. In other words, you can only install 3rd party operating systems from the internal optical drive, so that is something else to consider.
